The first product designed to clean both plant and dairy milks

Urnex_Accademia-27.jpg
  • Formulated from a proprietary set of ingredients that remove protein, fat, and minerals in both plant and dairy milks.

  • We tested this product against other alkaline liquid cleaners and it outperformed them when used against all plant milks tested and performed similarly when used on dairy milk residue.

  • Made from ingredients derived from natural sources and are biodegradable, renewable and do not contain phosphates.

  • Due to its superior cleaning efficacy and versatility, this formula has replaced the previous Biocaf milk cleaner, which was an acid-based formula.

Finally, a Product that Addresses the Cleaning  Needs of Both Plant-Based and Dairy Milk

Urnex develops products to tackle the specific cleaning challenges posed by the combination of ingredients (coffee, water, milk), equipment and conditions in which the cleaning is being performed. That’s why we have unique formulas and formats for our cleaners for espresso machines, batch brewers, milk systems, roasting equipment and cold brew systems.

When we created our milk system cleaning products decades ago, we formulated these to address the cleaning challenges posed by dairy milk, which contains a specific mix of proteins, fats, and carbohydrates, that impart a unique flavor profile, sensory attributes, and nutritional profile that has historically been preferred by coffee professionals and coffee drinkers.

With the recent growth of plant-based milks, we have sought to develop solutions that are able to address the unique cleaning challenges posed by the broader set of ingredients that are found across both plant-based and dairy milks.

Plant milks contain fibers and fat-soluble vitamins that are not present in dairy milk. And the range of proteins, fats, vitamins and minerals can vary widely depending on the type of plant; for example, soy contains more than 10x the amount of protein as rice milk. Plant milks can also contain oils and emulsifiers, which help stabilize the product as well as perform a variety of sensory benefits.

Due to the protein content in and composition of plant milks, acid-based cleaners may curdle plant-based milks, causing blockages in milk lines within superautomatics. And while existing alkaline cleaners on the market may be a viable solution for plant milk, they do not achieve the same level of clean as the Biocaf Milk Frother Cleaning Liquid, which includes additional chemical agents that target plant milk residue.
